Food Pairing Notes
Savor the 2019 Rosé as the perfect companion for spring and summer sipping, and with dishes such as grilled seafood, roast chicken and margherita pizza.
Tasting Notes
The 2019 Rosé greets the nose with delicate aromas of orange blossom, watermelon, kiwi and citrus. A clean, stony texture delivers crisp flavors of strawberry, tangerine and mint leaf, all buoyed by lively acidity. A fresh, tangy finish lingers with quenching notes of lime zest.
Vineyard Notes
The 2019 Rosé comes specifically from Block 34 at Margarita Vineyard, which occupies one of the coolest spots in the entire Paso Robles region. Here, a notch in the coastal peaks invites an ingress of brisk marine air, fostering the crisp flavors and acidity that we consider vital to crafting a true rosé.
Production Notes
A mild summer and moderate harvest weather in 2019 allowed for excellent flavor development in the vineyard. We picked the Pinot Noir fruit at early ripeness on September 7 to establish bright vibrancy in the wine. This fruit was wholly dedicated for rosé production to ensure a pure, refreshing style. After whole-cluster pressing, the juice was cold fermented in stainless steel tanks to preserve its delicate aromatics and crisp texture. After fermenting to full dryness, the wine was cold-aged in stainless steel for eight months prior to bottling.
